CBH - Inulin, a storage carbohydrate, is a natural food ingredient present in many
fruits and vegetables. It is composed of fructose units linked together by glucose
unit. Almost every molecule is terminated by a glucose unit. The artichoke Inulin
is a fructooligosaccharide derived from Jerusalem artichoke by a process similar to that used in extracting sugar from sugar beet.
Inulin can improve the theology of food products, related in particular to the perceived
mouth feel through its particle gel structure. So Inulin can improve the taste and texture of products and enhances the flavor of fruits, provides body and mouth feel to fat or sugar reduced products.
Inulin has high binding capacity. So inulin is very suitable used as excipient for direct compression due to its good tablet properties, e.g., high binding capacity, low lubricant sensitivity, high and controlled solubility, adequate disintegration, adequate flow ability and high chemical and physical stability.
